1 5/8 cup milk
2 tsp. vanilla
1/2 cup sugar
3/8 cup flour
1 egg and 2 egg yolks
1/8 tsp. cornstarch
1-2 Tbl. butter
homemade whipped cream (whip heavy whipping cream with powdered sugar)
two teaspoons of mango juice
a handful of fresh raspberries
fresh mint leaves, for garnish

Scald milk and vanilla in a saucepan. In a separate bowl mix sugar, flour, and eggs. Gradually add the warm milk mixture to the dry ingredients. Then put them back in saucepan and cook until sauce begins to thicken, stirring constantly. Remove from heat. Let cool five minutes. Add cornstarch and butter. Let completely cool and then mix with homemade whipped cream until desired consistency is reached. Mix in two teaspoons of mango juice. A little extra mango juice may be drizzled on top. Serve with fresh raspberries and garnish with mint.
