Mini peppers make a great snack or addition to any veggie board! I love these as an after-school snack idea for the kids because they are quick and easy to put together. Use your favorite dip to fill these. Whipped cream cheese and different types of seasoning are my go-to since they’re ingredients that I usually have on hand.
Ingredients
- 1 Bag of mini colorful sweet peppers
- 1 Tub whipped cream cheese
- ½ c hummus
- 1 tsp Everything bagel seasoning
- 1 tsp Green goddess seasoning
- 1 Bunch of flat-leaf parsley
Directions
- Start by slicing the mini peppers in half and pulling out any seeds. I chose to use the orange peppers so they would look the most like carrots.
- After cutting them in half, I made two small cuts in the shape of a V in the tops to remove the stem. This ends up looking better and gives a nice spot for the greens to sit, rather than just making a straight cut across the top.
- Now fill the peppers with your favorite dips! I did a combination of whipped cream cheese topped with everything bagel seasoning, whipped cream cheese topped with Green Goddess seasoning, and hummus. You could use anything you like for these including pre-made veggie dips from the grocery store.
- Arrange on a tray with more dip and veggies and serve!
Notes
- I used flat-leaf parsley to make the carrot tops, but you could switch it out for cilantro, curly-leaf parsley, dill, or even chives. I would choose something that you have a use for, since you don’t need the whole bunch and you’ll have a lot left over. Try to pick something that won’t go to waste!
- The possibilities are endless for what you can fill these with! If you have a favorite dip recipe or a favorite veggie dip from the store, they would be perfect!
